Fresh Double Gloucester

Double Gloucester is a cheese produced in the English county of Gloucestershire since the 16th century. It is made from a mixture of morning and afternoon milking cow's milk, hence the adjective double in its name. It is a semi-soft cheese that is similar to Tomme de Savoie.

Originally Gloucester cheese was made only from Gloucester cow's milk. This breed, which almost disappeared, has been relaunched since 1973.

This cheese is also used as a hare to the competitors of the famous cheese race which is held in England every year near Gloucester: Cooper's Hill Cheese-Rolling and Wake.
