Queso Chihuahua cheese

In Mexico, Chihuahua queso is generally recognized as a soft cottage cheese available in braids, balls or rounds and is native to the Mexican state of Chihuahua. In Chihuahua, it is called queso menonita, after the Mennonite communities in northern Mexico who first produced it, while elsewhere it is called queso Chihuahua. This cheese is now made by Mennonites and non-Mennonites across the state and is popular across the country.

Queso Chihuahua is good for melting and is similar to a mild white cheddar or a Monterey jack. It can be used in queso fundido (melted cheese fondue style), choriqueso, quesadillas, chilaquiles, chili con queso, or sauces.
